Tomorrow we head down to Miami for the South Beach Wine and Food Festival. The festival opens Thursday, but we need to arrive well in advance to prepare all the food we’ll be doling out. We're serving nearly two thousand people four days in a row. Yeowza! The SoBe team has secured a local ice cream truck for us to use- who knows what it will be like? How fun! On Tuesday and Wednesday we’ll be in a big commercial kitchen getting ourselves ready. We’ve got cookies to bake, dulce de leche to prepare, and shake bases to mix. We’re bringing our friend Eric to help us out, and the wonderful Fany Gerson (aka La Newyorkina) will be making popsicles for us to serve at Sunday’s closing event. We’ll also have a team of culinary students from FIU assisting us- a huge relief.
South Beach Wine and Food Festival is a charity event, and all funds raised go to Florida International University’s Chaplin School of Hospitality. To help keep our expenses low, we asked several of our suppliers to donate goods to the festival- and they did. How nice! Here are the menus we’ll be serving at each particular party, and a link to the folks who are providing important items all at their own expense. In addition, Herban Essentials has donated thousands of their awesome towelettes- so no one will be left wandering Miami Beach with nasty Choinkwich fingers!
